When I first started on a vegan diet, I was worried that I wouldn’t have enough time to cook, and I assumed it took a lot of planning, but that’s not the case. This recipe is for my daughter Tara, and she told me, « Dad, it only takes 15 minutes to make. » So I tried it.
It’s very easy to make (for someone like me who’s new to anything other than bacon and cabbage or a roast dinner). It is a spicy curry with brown rice pasta. I never thought I’d see the day I would be cooking a curry or noodles, but I have to say this is my favorite dish since Tara gave me her recipe. After a long day working outside, it’s delicious, fast and super filling.
I use a bag of frozen Asian-style vegetables for this as it only takes seven minutes to cook. Alternatively, you can add two carrots, some broccoli, a medium onion, some green beans, and four stalks of baby corn. You can find teriyaki tofu in most supermarkets, or just use plain tofu. For the pasta, I use whole chickpea fusilli. You can also use rice but chickpea pasta adds more protein.

Tara Teriyaki Tofu Curry
Serves 3
Ingredients
Coconut Oil
1 bag of frozen vegetables
1 can of coconut milk
1 tablespoon curry powder
1 tablespoon of paprika
1 teaspoon turmeric
½ green pepper
½ red pepper
1 teriyaki tofu block, diced and fried
200gm chickpeas fusilli, whole grains
Nori/Irish seaweed for garnish
method
1 Add a little oil to the skillet over low heat.
2 Add the vegetables, if using frozen, this takes 5 to 7 minutes to simmer. If you don’t have a stir-fry mix, add the chopped carrots, broccoli, green beans, and baby corn and cook until softened.
3 Add a can of coconut milk. Stir and leave on low to medium heat. Add green pepper, red pepper, curry powder, paprika and turmeric.
4 Next, add the pre-cooked tofu, and let it simmer when you begin to cook the noodles.
5 Put 200 grams of pasta in boiling hot water. Add 1 tablespoon of turmeric to the water to flavor the pasta. When the pasta is ready, drain it, then add the pasta to the curry in the pan and mix together. For garnish, I use some wild Irish seaweed nori.
